Lecavalier Petrone, Montreal, CA / Dupont Blouin

Under the guidance of Chloé Migneault-Lecavalier and Loïse Desjardins-Petrone, Lecavalier Petrone has emerged as a revered establishment dedicated to the pursuit of exquisite indulgence. Since its modest inception in 2015, this workshop has soared to the pinnacle of the culinary realm, earning accolades and recognition, most notably with Chloé being honored as the esteemed pastry chef of the year 2022 by the prestigious Lauriers de la gastronomie québécoise. With their remarkable success, these two artisan entrepreneurs have made the decision to transform their space into a workshop-boutique, where every nook and cranny exudes the artistry of gourmet confectionery.

Nestled in the heart of Montreal‘s Pointe-Saint-Charles neighborhood, their sanctuary, once a simple open-concept commercial area, now aspires to become the ultimate sanctuary for indulging in sweet pleasures. However, in order to preserve their work in this sacred place, they have enlisted the expertise of Dupont Blouin, with the aim of transcending the limitations of the existing space without the need for relocation.

This ambitious and exhilarating endeavor involves a comprehensive renovation, with the goal of optimizing every inch and magnifying every detail, all while maintaining the quality and efficiency of their production. United by a shared vision, the two partners have meticulously outlined the scope of this large-scale project, taking into account every aspect of the workshop-boutique.

The essence of their aspirations emanates from the carefully crafted program: a boutique space that seamlessly combines functionality and aesthetics, a checkout area that facilitates smooth navigation between online orders and in-store purchases, strategically positioned preparation zones that enhance the creation process, and an office space that offers a breathtaking view of their sweet kingdom.

In this quest for perfection, the architectural approach adopted mirrors their craftsmanship: understated, elegant, and devoid of excess. The goal is to spotlight the delectable treasures that emanate from their expert hands. Thus, the palette of colors, soft and refined, harmonizes seamlessly with carefully chosen materials: the speckled black porcelain mosaic evoking the softness of vanilla chantilly, solid surface countertops facilitating maintenance, and galvanized steel adding a subtle industrial touch.

Inside, delicate curves guide the gaze, creating a symbiosis between space and displayed products, while curtains delicately delineate the public space from the necessary privacy for preparations. Strategically placed openings offer fleeting glimpses of artisans at work, reinforcing the intimate connection between creator and audience.

Although this endeavor is not without its challenges, notably the temporal challenge imposed by the need to temporarily close to minimize disruptions, Chloé and Loïse have moved forward with determination, fueled by the passion that has driven them since day one. In this ballet of flavors and textures, they remain convinced that every effort exerted, every detail refined, will be commensurate with their ambition: to make Lecavalier Petrone a place where indulgence is transformed into a true work of art.
